Die Tour beginnt mit einem Besuch der Altstadt von Monopoli mit einem Halt am Duomo, der Basilica Concattedrale, bevor es in die typische Landschaft Apuliens geht, umgeben von einem Meer aus Olivenbäumen und Trockenmauern.
Die Tour führt weiter auf alten Pfaden zur ländlichen Kirche Spirito Santo, diese tausend Jahre alte Höhlenkirche wird seit dem IX. Jahrhundert genutzt und beherbergt mittelalterliche Fresken. Die Olivenbäume mit ihren verdrehten Stämmen und die befestigten Bauernhöfe (Masserie) sind Ausdruck des faszinierenden und glamourösen Landlebens.
Die Tour endet mit einer entspannten Fahrradtour und einer Verkostung von handwerklich hergestelltem Eis (Sorbetto) abseits des Stadtverkehrs.
